  • Egusi stew, ground
  • 80g Cream
  • 2 Large Eggs
  • Puff Pastry Sheets, ready-rolled
  • 1/6 cup Cheese (of your choice), grated
  • Salt and Pepper, to taste

  2. Make the Filling: In a bowl, mix the ground Egusi stew, cream, and eggs until well combined. Season with salt and pepper.
  3. Prepare the Pastry: Cut the pastry sheets into squares that fit your muffin tin or quiche tray. Press each square into the tray to form a mini crust.
  4. Assemble the Quiche: Spoon the Egusi mixture into each pastry cup. Sprinkle grated cheese on top.
  5. Bake: Bake in the preheated oven for 15-20 minutes or until the filling is set and the pastry is golden.
